There’s nothing like an Italian dry rub on a roast beef, chicken or fish of any kind. These cool dry rub recipes give you maximum flavour with really minimum effort on your part (and yes, it can be that easy).
mediterranean dry rub
PREPARATION: 5 minutes
YIELD: Single use
INGREDIENTS:
2 tbsp. Panago Cucina Italiano seasoning
1 tsp. Panago Cucina Mediterranean Sea Salt
1⁄2 tsp. Panago Cucina Three-Chilli seasoning
METHOD: Combine the three dry ingredients in a bowl (you can store this dry rub mix in a sealed container for up to 6 months). Apply the Mediterranean Dry Rub directly + massage the rib roast. If you’re preparing a large roast, simply cut slashes into the surface before rubbing the spice blend – this allows the spices to penetrate providing a beefy, "machismo" flavour!
Finish by cooking as you would normally, based on weight and internal temperature.
toscana roasted chicken
PREPARATION: 5 minutes
YIELD: Single use
INGREDIENTS:
2 tbsp. Panago Cucina Italiano seasoning
1 tsp. Panago Cucina Mediterranean Sea Salt
1⁄2 tsp. Panago Cucina Three-Chilli seasoning
METHOD: Apply the Mediterranean Dry Rub directly + massage the whole chicken or turkey.
If you’re preparing a large bird, simply rub in the spice blend and set aside in the refrigerator for a few hours – this allows the spices to penetrate providing “magnifico” flavour!
Finish by cooking as you would normally, based on weight + internal temperature.
pugliese halibut
PREPARATION: 5 minutes
YIELD: Single use
INGREDIENTS:
2 tbsp. Panago Cucina Italiano seasoning
1 tsp. Panago Cucina Sea Salt
1⁄2 tsp. Panago Cucina Three-Chilli seasoning
1 lime + dill sprig for garnish
METHOD: Apply the Mediterranean Dry Rub directly to the halibut and bake in a 350°~375° F oven based on thickness. Always remember, seafood cooks in less time than you think – a good rule of thumb is to remove the fish from the heat before it is “well done” letting it continue to cook in its own heat.
Italian roasted vegetables
PREPARATION: 5 minutes
YIELD: Dependent on quantity of vegetables used
INGREDIENTS:
(refer to ITALIAN HERB OIL recipe)

METHOD: Just throw a few of your best guesses at what could be Italian-like veggies – onions, red peppers, potatoes, carrots, zucchini and turnips (but only if you’re of the 2% of the population who can truly say they like turnips) into a roasting pan. Drizzle generously with the Herb Oil + roast at 375° F for 45 minutes. Check + stir occasionally.
Finish with Italiano seasoning + sea salt. These roasted veggies are great as either a side dish or as a vegan main course.
